В статье были изучены факторы, оказывающие негативное воздействие на региональные хлебопекарные предприятия в России, включая сложности, с которыми они сталкиваются в условиях санкций, в частности ограничения сотрудничества с ведущими поставщиками ингредиентов и оборудования. Была рассмотрена динамика финансовых показателей сети пекарен «Хлебница» за 2022 и 2023 годы и их корректировка с применением цифровых технологий. Предложено совершенствование системы обслуживания потребителей. Следует отметить, что региональные хлебопекарные предприятия в Российской Федерации сталкиваются с рядом проблем, включая рост цен на сырье, экономические санкции, что требует активных мер по стимулированию развития. В то же время обнаружены перспективы роста и развития в хлебопекарной сфере, включая инвестиции в модернизацию производства и инновации. Было отмечено, что региональная хлебопекарная отрасль в условиях санкций претерпела диверсификацию ассортимента. Выявлено, что большинство пекарен работают в крупных городах (Москва, Санкт-Петербург и т.д.). Доля рынка в городах регионального значения существенно ниже из-за более низких доходов населения.
The article examined the factors that have a negative impact on regional bakery enterprises in Russia, including the difficulties they face under sanctions, in particular restrictions on cooperation with leading suppliers of ingredients and equipment. The dynamics of the financial indicators of the bakery chain "Khlebnitsa" for 2022 and 2023 and their adjustment with the use of digital technologies were considered. The improvement of the customer service system is proposed. It should be noted that regional bakery enterprises in the Russian Federation face a number of problems, including rising prices for raw materials, economic sanctions, which requires active measures to stimulate development. At the same time, prospects for growth and development in the bakery sector have been discovered, including investments in production modernization and innovation. It was noted that the regional bakery industry has undergone a diversification of the assortment in the face of sanctions. It was revealed that most bakeries operate in large cities (Moscow, St. Petersburg, etc.). The market share in cities of regional importance is significantly lower due to lower incomes of the population.
