Abstract

The article proposes a new approach to modeling personalized nutrition based on the analogy with the strength of composites. A two-component “matrix-filler” model is composed, where the genetically determined metabolic potential of a person acts as a matrix, and nutrients act as a filler. The efficiency indicator of the metabolic system (“integral indicator of health”) is determined as the sum of the contributions of the basic level and the modifying effect of nutrients, taking into account their share, efficiency, and individual genetic coefficients. To solve the problem of multi-criteria selection of the optimal diet under conditions of uncertainty, the SMAA-MOORA method was used, which allows ranking alternatives by the probability of achieving the best result. Based on the analysis of the acceptability index ranks, the optimal recipes for pasta products with the addition of banana flour and hydrocolloids were determined.
